Oreaha BBQ Beef Omelets

                All of my life I have been filled with an incurable wanderlust, due to my heritage I don’t have to hurry to see everything. Every few years I move to a new place and take a job I have not done yet. The job I enjoyed the most was when I became a hand for one of the cattle ranches on the High Plane. I worked for five years as a cattleman for Gus owner of the Double Bend Ranch. We camped where ever the heard wandered, spending some nights looking out over the northern cliffs at the ocean over a mile below. Other times we spent our nights within a stone’s throw of the southern cliffs listing to the bird calls drift up from the low forests.  It made me wonder if Oreaha had always been this way or whether some ancient magic lifted up the northern half of the continent.
                Life on the ranch and on the trail was hard. We would wake up every day before first light and go to sleep after the sun set. We mostly ate trail rations consisting of dried beans and a mush made from trail biscuits. Trail biscuits reminded me of the sea biscuits or hard tack given to seamen when all other food supplies had run out. Once a month they drove the cattle back to the ranch so they could take the ones for market and those to fill the special orders from far away kings. At this time one cow would be slaughtered to make smoked jerky and to have a feast that night. A barrel of beer would be brought out and everyone would relax and have fun. The men who considered themselves musicians would bring out the instruments and play late into the night.
                Over the years I met then danced with Lorallair, daughter of Gus the man who owned the Double Bend Ranch. I began to look forward more to the morning after when she would help the cook make wonderful omelets made from what remained of the previous nights feast. Some of the beef was left to slow-cooked on the coals over night in a delicious BBQ sauce. The cook never told me the recipe for the BBQ sauce but Lorallair showed me how to make the omelets. When I left Lorallair came with me and soon after we got married. We traveled together until she died fifty years later far from her home. We raised a son who chose to stay in the capital of South Dalron after I took him to see the great library there.

2 oz Pulled BBQ Beef
2-3 Eggs
1 Teaspoon milk
2 oz Shredded cheese (your choice)
Diced green onions - Mix the 3 eggs with the milk until well blended

- Pour into greased skillet, on medium heat
- Sprinkle beef on 1/2 the eggs then sprinkle green onions over beef.
- Sprinkle cheese over the entire omelet, cover or put under broiler set to 350
- When eggs are done apx. 2-3 min. carefully slide it on to a plate beef half first then fold it over
serve with hash browns and toast.
