Ice Tide baked chicken with lobster rice


There is a festival in the port city of NorthRidge that is timed with the winter solstice. It is called Ice Tide, it was a holiday conceived due to the risk of icebergs in the Bay of Frost. The city founders created this holiday to keep the sailors at home during the most dangerous times.

The traditional good luck dish to serve is the baked chicken with lobster rice. Who first made this dish is lost to antiquity. Many other dishes are served but every house serves this one . There is a rumor that in the more affluent homes it is steamed lobster and chicken rice.

1 whole split chicken
1 teaspoon ground sage
1 teaspoon ground thyme
1 teaspoon ground white pepper
1 teaspoon powdered garlic

- Pre heat oven to 350
- Combine herb in bowl mix well.
- Optional remove skin from chicken
- Place chicken in large baking pan.
- Sprinkle mixed herbs over chicken
- Bake until the internal temperature of the chicken goes above 165

2 cups lobster broth
2 cups rice
3 tablespoons butter
2 table spoons spicy salsa

- Combine broth, butter and salsa and bring to boil
- Add rice and reduce heat
- Let simmer until the rice has absorbed the liquid stirring occasionally
- Fluff rice and serve

Serve on plate with chicken overlapping the bed of rice.
