Ice Tide baked pears
There is a festival in the port city of NorthRidge that is timed
with the winter solstice. It is called Ice Tide, it was a holiday
conceived due to the risk of icebergs in the Bay of Frost. The city
founders created this holiday to keep the sailors at home during
the most dangerous times.
This is one of the desserts my old landlady once made for me and I have
remembered it ever since. It took me over a year to get the recipe after
washing more pots and pans than I care to remember.
1 bottle Riesling (sweeter not drier)
5 red pears
4 whole cloves
1 cup yellow raisins
¼ cup dark brown sugar
- Half and core pears
- Then slice the pears, place in baking dish sprinkle raisins and add
cloves
- Cover and place in refrigerator at least 12 hours before baking.
- Just before baking, remove cloves and sprinkle with brown sugar
- Bake at 325 for 45 min or 350 for 30 min..
