Minrod Korabi Salad

What is a Korabi you might ask?  I know I did when my company the Royal Dragoons was sent to Minrod.  They had been having trouble with Boar Worms in the mines.  The king sent us to deal with the problem.

Now I know you are asking what is a Boar Worm is.  It’s about a five foot long, two foot thick worm with skin so tough only magical swords will cut it.  They eat their way through solid granite.  Legends claim that the Boar Worms were bred by the People of The Dark to help them mine before The First War.  They were controlled by spells now lost in the mists of time.

The captain knew that fire would hurt them and so we would find a freshly dug hole and pour burning pitch down it.  They never made noise except the thumping of their bodies against the tunnel walls.  That was a horrible two weeks in the dark search for fresh wormholes and the horrible smell and the thumping…  It would have been better if they screamed.

The town mayor, who was the owner of the mine, held a banquet for us when we had reduced the number of Boar Worms to his satisfaction.  This is when I first encountered Korabi Salad and had to ask the server what a Korabi is.  She told me it is a green vegetable like a turnip that only grows near Minrod.  The server told me she might trade me the recipe for a look at my scars.

 

2 Cups peeled and shredded Korabi
½ Cup shredded carrots
½ Cup thin sliced red bell pepper
¼ Cup chives
1Lbs Baby spinach
18 Half strips of thick cut bacon
1 Cup water
1/3 Cup cider vinegar
1/3 Cup sugar

- Mix vinegar, sugar and water making sure the sugar dissolves
- Cook the bacon slowly over medium heat and well browned set aside on paper towel to take away the grease.
- When shredding and cutting the vegetables make them all about 1 inch long.
- Mix vegetables and then submerge them in the liquids for about 5 minutes.
- Drain off the liquid, it can be used again if you are making multiple batches.
- On a small plate or bowl place a thin bed of the baby spinach.
- Place about a ½ cup scoop of the vegetables neatly on the bed of spinach
- Place 3 half strips of bacon on top in a tent fashion.

Makes 6 servings.
