Pier Side Inn Pork Chops

While I was in the Army I traveled widely to stop the many feudal wars of the low lords.  I have many fond memories from that time.  My regiment was known throughout the kingdom as the Best Fighters.  No one started in the Royal Dragoons of Southern Dalron, you had to be recommended by a commander of another battalion and then have more training and then pass a test.  There were never more than fifty of us, but forces ten times our size would retreat rather than face us and the wrath of the king.

I remember when a lord near West Port had given two of his vassals land on either side of a small town.  The lord knew that the two were always competing but was unaware of just how deep the jealously went.  After a few years the vassals farms were doing equally well and both had secretly hired small bands of men to disrupt the others progress.  Two more years passed and the vassals found themselves at the mercy of the men they had hired.  The lord sent a message to the king for help with the two bandit gangs troubling his small town.

We were sent and quickly found the truth of the matter and dealt with both groups within one week.  Our captain let us stay the last night at the only inn the small town had.  It was called the Pier Side Inn, despite being fifty miles from the ocean.  But the owner had tried to make it look the part with nets and ship paraphernalia nailed to the walls.  I was not brave enough to try the fish, but the pork chops were the best I have ever had.

A year later we were sent back to the same village.  The surviving mercenaries turned bandits had put aside their differences which were few and started working together.  I was disheartened to discover by the time we got there that they had burned the Pier Side Inn down.  This time we made sure to capture or kill all of the bandits.  It took a few weeks and in that time I made a point to get the recipe for the pork chops.

1 cup corn meal
½ cup flour
1 Tablespoon mustard powder
1 tsp salt
½ tsp pepper
1 tsp onion powder
1 tsp garlic powder
½ Cup milk
4-5 large pork chops or 6-7 small pork chops
2-3 Tablespoons oil

- Heat oven to 350°
- Mix corn meal, flour, and spices in a large bowl
- Wash each pork chop in the milk
- Then coat in corn mixture
- Heat pan and add oil then pork chops
- Brown pork chops on each side
- Then place them on a greased baking sheet and cook them in the oven for 15 minutes flipping them every couple of minutes.
