What’s old is new again Sweet Potato Salad

When I was traveling with my unit I felt a sense of wonder and discovery with every step. Once I retired and began to study in the libraries I found that all the things I had thought were new had simply been forgotten. The Squerlin villages in the Forest of Myst had been found and forgotten at least a dozen times in the last thousand years if you know which books to look in.

There have been four “Ages of Discovery” since the first war. Shipping routes that became too dangerous due to storms, sea monsters or Blood Pirates, are rediscovered. This reopens Dalron to people, food and goods that are thought to be new. Recently a merchant brought back from far off lands something he calls a sweet potato. He claims that it comes from an island where they make it into almost every kind of dish you can think of including a very good salad. He sold the recipe for the salad to a local restaurant. He also claims that no one has ever brought them here before.

The merchant is wrong about his claim that the sweet potatoes have never been brought here before. I found in a few books, talk of a plant called yellow root. That was brought on a ship two hundred years ago. One of the books has a drawing of the root leaf and flowers. It was brought over as an ornamental vine plant because of its attractive flower and how quickly it grows.  Sadly it was only popular for a few years and one is left to speculate as to what might have been if people had only known about the edible root. The restaurant was not very careful with guarding the recipe so I included it lest it be forgotten as well.

2 cups 1/4 cubed sweet potato
1/4 cup minced sweet onions
1/4 diced green bell pepper
1/4 mayo
1/4 real maple syrup
1/2 crushed black walnuts

- Put the cubed sweet potato into boiling water for about 5 minutes or until tender, remember the sweet potato will continue to cook once removed from the water.

- Drain the cubed sweet potato and place in large mixing bowl and mix in the minced onions

- Let cool

- Mix in bell peppers in walnuts.

- Then add the maple syrup and mayo mix well.
